- In a large pot, heat a drizzle of olive oil over medium heat. Add Italian sausage, breaking it into crumbles, and cook for about 5–7 minutes until browned.
- Add minced garlic and chopped spinach to the pot. Sauté for 2–3 minutes until fragrant and spinach is wilted.
- Pour in chicken broth and bring to a vigorous boil over high heat. Let steep for about 2 minutes.
- Add broken lasagna noodles and cook according to package instructions, stirring occasionally for 8–10 minutes.
- Reduce heat to low, and stir in heavy cream and mozzarella cheese until melted, about 2–3 minutes.
- Taste and adjust seasoning. Serve hot, topped with grated Parmesan cheese.
