Ingredients
  

For the Marinade
  • 1/4 cup freshly squeezed lime juice
  • 2 cloves minced garlic
  • 1 handful chopped cilantro omit if not a fan
  • 1 teaspoon salt opt for sea salt or kosher salt
For the Dredging
  • 1 cup all-purpose flour gluten-free alternative is fine
  • 2 large eggs can use a flax egg for vegan
  • 1 cup panko breadcrumbs regular breadcrumbs can be used
For the Seasoning
  • 1 teaspoon smoked paprika adjust to taste
  • 1 teaspoon garlic powder adjust to taste
  • 1 teaspoon cumin powder adjust to taste
  • 1 teaspoon chili powder adjust to taste
  • 1 teaspoon pepper adjust to taste
For the Slaw
  • 2 cups shredded cabbage mix using pre-packaged mixes can save time
  • 1 cup shredded carrots
  • 1/4 cup mayonnaise substitute yogurt for lighter version
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar

Method
 

Prepare Marinade
  1. In a medium bowl, combine the lime juice, minced garlic, chopped cilantro, and salt. Whisk together until fully blended.
  2. Let sit for a minute to allow flavors to marry.
Set Up Dredging Station
  1. Place three shallow bowls in a row: one for flour, one for beaten eggs, and one for panko breadcrumbs.
Coat Fish
  1. Dredge fish pieces in flour, dip in eggs, then coat with panko breadcrumbs until evenly coated.
Make Slaw
  1. Combine shredded cabbage mix, shredded carrots, mayonnaise, lime juice, and apple cider vinegar. Toss until well coated.
Cook Fish
  1. Heat a skillet over medium-high heat with a splash of oil. Cook coated fish strips for 3-4 minutes per side until golden brown.
Serve
  1. Arrange fish over rice or quinoa and top with slaw. Add lime wedges or avocado slices if desired.
