Step-by-Step Instructions
  1. In a large mixing bowl, combine the drained white beans with freshly squeezed lemon juice, a splash of olive oil, minced garlic, dried oregano, salt, and black pepper. Stir everything together gently until well-coated. Cover the bowl with plastic wrap and let the beans marinate for 15-20 minutes at room temperature.
  2. While the beans absorb the flavors, wash and chop the cucumber, cherry tomatoes, and red onion into bite-sized pieces, and chop the fresh parsley or dill.
  3. Once marinated, gently fold the prepared cucumber, cherry tomatoes, red onion, and Kalamata olives into the marinated beans.
  4. Carefully sprinkle crumbled feta cheese into the salad, folding it in delicately. Adjust seasoning with additional salt and pepper if needed. Serve immediately or refrigerate for 20-30 minutes to enhance flavors.
