Ingredients
  

For the Rice
  • 1 cup long-grain white rice rinse before cooking
  • 3 cups water boiling liquid
  • 1 tablespoon olive oil adds flavor
  • 1 teaspoon salt
For the Chicken Marinade
  • 1 pound boneless skinless chicken breasts sliced into strips
  • 1/4 cup honey
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 2 cloves garlic minced
  • 1/4 cup fresh cilantro chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste black pepper
For the Bowl Assembly
  • 2 tablespoons vegetable oil for cooking chicken
  • 1 cup corn kernels
  • 1 can black beans drained
  • 1 each avocado sliced
  • 1 each red onion thinly sliced, optional garnish
  • to taste extra cilantro for garnish
  • to taste lime wedges for garnish

Method
 

Step-by-Step Instructions
  1. Rinse the rice under cold running water in a fine-mesh strainer until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, water, olive oil, and salt. Bring to a boil, then reduce to low and simmer covered for 18-20 minutes.
  3. In a mixing bowl, whisk together honey, lime juice, lime zest, minced garlic, cilantro, cumin, chili powder, and season with salt and pepper.
  4. Cut the chicken into strips and add to the marinade, tossing to coat. Marinate for 10 minutes.
  5. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-6 minutes on each side until cooked through.
  6. Warm corn and black beans in a small pan over low heat until heated through.
  7. Fluff the rice and divide among bowls, top with chicken, corn, beans, and avocado slices.
  8. Garnish with cilantro and lime wedges before serving.
