  • 8 oz Pasta cooked and cooled
  • 1 cup Corn fresh or canned, drained
  • 1 cup Cherry Tomatoes halved
  • 1 bell pepper Bell Pepper diced
  • 1 bunch Cilantro chopped
  • 1/2 cup Red onion finely chopped
  • 1/3 cup Olive oil
  • 2 tbsp Lime juice freshly squeezed
  • 1 tsp Cumin
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large mixing bowl, combine all the ingredients: cooked pasta, corn, cherry tomatoes, bell pepper, cilantro, and red onion.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss until everything is well coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
