Step-by-Step Instructions
  1. Cook the pasta by bringing a medium pot of salted water to a boil. Add the tagliatelle and cook until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
  2. Sauté the aromatics by heating olive oil in a skillet over medium heat. Add minced garlic and onion, cooking for 2-3 minutes until soft.
  3. Add the vegetables by tossing in sliced mushrooms and zucchini. Cook for 3-4 minutes until tender and vibrant.
  4. Season the mixture by adding red pepper flakes, salt, and pepper. Stir in pesto until well combined.
  5. Combine with pasta by adding drained pasta to the skillet and tossing for 2-3 minutes. Adjust with reserved pasta water if needed.
